Central Coast Chef Charles Paladin Wayne sources local artisan producers to create culinary art matched to garagiste wines; winemakers include Bodegas M, Caliza, Clos Solene, Cutruzzola, Paix Sur Terre, and The Farm Winery; Garagiste dinner to be held at the historic Carlton Hotel
Paso Robles, CA – September 25, 2013 –The Garagiste Festival, the first and only festival dedicated to discovering and promoting artisan ‘garagiste*’ winemakers, today announced that Chef Charles Paladin Wayne will create the winemaker dinner for the third annual Garagiste Festival.
The dinner, “Undiscovered Treasures of California’s Central Coast,” kicks off the festival on Thursday November 7th, and highlights local producers, as well as garagiste winemakers who are pouring at the festival. The dinner will be held at a hidden gem of the Central Coast, the historic Carlton Hotel in Atascadero. Wineries featured at the dinner are Bodegas M, Caliza, Clos Solene, Cutruzzola, Paix Sur Terre and The Farm Winery.
“The Central Coast is a treasure trove of artisan winemakers, food producers, culinary artists and beautiful venues… but much of this remains undiscovered by those not in the know. The Garagiste Festival is all about bringing awareness to lesser known, small-lot artisan winemakers and our dinner this year reflects that credo on all levels,” said Garagiste Festival Co-founder Doug Minnick. “Chef Charlie, who has long been renowned locally for the magic he creates from the area’s remarkable food producers, was instrumental in the success of our dinner last year, which was brilliantly chef’d by Ludo Lefebvre. This year, he is the perfect choice for our completely Central Coast line-up, featuring some of the region’s most exciting garagiste winemakers matched with six stunning courses, all served amidst the elegance of the historic Carlton Hotel.”
Chef Charlie has been a chef on the Central Coast since 1983, working at numerous restaurants including Sea Venture, Olde Port Inn, Café Roma, Inn at Morro Bay, and Rhythm Creekside Café. He was one of the first chefs in the area to focus on creating menus from the emerging local artisan food movement, showcasing local organic produce, seafoods, cheeses and sustainably ranched meats; then, when there were only nine wineries in business in the area, expanding his focus to matching local foods with local wines. He created the first wine dinner in 1987 for Eberle and went on to serve as chef at several of the area's early flagship wineries, including Edna Valley, Justin Vineyards and Summerwood Winery, where he developed a following and a reputation as the go-to chef for creative and perfectly balanced food and wine pairings. Today, Chef Charlie is one of the area’s most in-demand event chefs, bringing his unique flair with local wines, foods and service to private events.
“My core belief as a chef is to utilize what is in your community’s backyard -- and we have such treasures in ours here on the Central Coast, many of which are often overlooked,” said Chef Charlie. “I am excited to have the opportunity to bring attention to the richness of our region’s talent, produce and garagiste vintners in this locally-sourced dinner which will, in the true spirit of the garagistes, be completely hand-crafted, full of surprises, blessed with the joys of our unique ‘terroir,’ somewhat renegade and, I hope, completely delicious.”
Undiscovered Treasures: The Producers
Among the many local foods and producers featured at the dinner will be Nick Ranch organic grass-fed beef; goat cheeses from Beverly Michaels at Alcea Rosea Farm; sheep’s milk cheeses from Christine McGuire at Riconada Dairy; crème fraiche from Sadie Kendall; herbs and vegetables from Bill and Barbara Spencer at Windrose Farm, Colleen Childers at Blue Sky Gardens, and Ken Snokes at Santa Margarita Farms; olive oil from Olea Farms, and oysters from Niel Maloney at Morro Bay Oyster Company. Click here for the menu.
Undiscovered Treasures: The Carlton Hotel A true hidden gem, built in 1928 and situated in downtown Atascadero, The Carlton Hotel was beautifully restored to its original splendor in 2005 and offers luxury accommodations in the heart of the Central Coast. The dinner will be held in the main dining room of The Carlton Hotel, which is a key sponsor of the 2013 Garagiste Festival. The hotel is offering a 10% discount to dinner and Festival guests. Please call 805-461-5100 and tell them you're with the Garagiste Festival.
Undiscovered Treasures: The Wines and Winemakers Selected by a blind tasting panel for the dinner, the wines offer a diverse selection of some of the best of the Garagiste Festival.
• 2011 Bodegas M Albarino Bodegas M has been producing hand-crafted, top-quality Spanish varietals since 2007 and is one of the first producers of Albarino in California. The owner Michael Young and winemaker Alan Kinne spent many years in Spain’s most famous wine regions. Bodegas M is pouring at the Garagiste Festival for the third time this year.
• 2012 Caliza Kissin’ Cousins Rhone White Blend Caliza has been producing wines since 2006. Located in the Templeton Gap area of West Paso Robles, the winery originally sourced their grapes, but now produces mostly all-estate wines. Jeb Dunnuck of The Wine Advocate recently had this to say about Caliza: "This up-and-coming Paso Robles estate needs to be on everyone's radar. The wines are distinctly Paso and have fabulous concentration and richness, while staying beautifully drinkable."
• 2010 Cutruzzola Gloria Pinot Noir This is the second vintage for Cutruzzola and their second year at the festival winemaker dinner. Last year, Cutruzzola’s 2010 Riesling was featured alongside Chef Ludo’s Lemon Meringue Poppy Seed Crumble. The Cutruzzola vineyard is located in Cambria and planted to only 3.5 acres of Pinot Noir. Less than 150 cases of 2010 Gloria Pinot Noir were produced.
• 2011 Paix Sur Terre "The Other One" Mourvedre Paix Sur Terre (Peace on Earth) was launched in 2010 by Ryan and Nicole Pease with the goal of producing a portfolio of truly mineral driven Mourvedres that showcases both the terroir of Paso and the uniqueness of the varietal. Only 77 cases of “The Other One” were produced and it is already sold out.
• 2011 Clos Solene "Hommage a nos Pairs" Syrah Recently featured in ‘The Wine Enthusiast’ as one of Steve Heimoff's top picks for “New Faces to Watch from Paso Robles,” Guillaume Fabre founded his winery with his wife Solene in 2007 and also serves as assistant winemaker at the esteemed L'Aventure Winery. With only 100 cases produced, the grapes in the 2011 Hommage a nos Pairs Syrah come from the L'Aventure and Russel Family Vineyards. The wine also includes a bit of Fabre’s favorite white grape, Roussanne.
• 2009 "The Big Game" (Syrah / Cabernet / Cab Franc Blend) The Farm Winery Nestled in the Westside hills of Paso Robles, and listed as one of “Four to Watch” by the Wine Spectator this year, The Farm Winery was launched in 2009 by Jim and Azmina Madsen and Santiago and Mercedes Achaval. Winemaker Santiago Achaval is known throughout the world for crafting some of the very finest Malbecs in Argentina today. Fewer than 100 cases of the 2009 Big Game were produced and it is usually only available to mailing list members.
The 2013 Garagiste Festival takes place over four days from November 7th – 10th in Paso Robles and includes The Opening Round Tasting, "Shiners, Samples & Secrets" Winemaker Mixer, Wine Tasting Seminars, the Grand Tasting, an After Party and a symposium for aspiring winemakers. The main event will again be held at Windfall Farms, while specialized events will take place at other Paso Robles venues, including the Pavilion on the Lake in Atascadero. *Garagistes (gar-uh-zhe-stuh) is a term originally used in the Bordeaux region of France to denigrate renegade small-lot wine makers, sometimes working in their “garages” (anything considered not a chateau), who refused to follow the “rules,” and is now a full-fledged movement responsible for making some of the best wine in the world.
About The Garagiste Festivals
The Garagiste Festivals (http://www.garagistefestival.com) are the first and only wine festivals dedicated to the undiscovered and under-recognized artisan ‘garagiste’ producers who are making some of the best, most exciting, handcrafted small-lot production wines in the world. PASO ROBLES, CA—August 28, 2013—Visitors seeking a truly unique wine region have flocked to the Paso Robles area for years. With more than 270 wineries to choose from, there’s no shortage of wine experiences in California’s “Rhone Zone.” And now that experience starts the moment a guest enters their room.
The Paso Robles Inn, located on the town’s city square in Paso Robles on California’s Central Coast in San Luis Obispo County, has launched a unique wine partnership with local wineries.
The concept involves infusing various winery characteristics into the décor, ambience and amenities of each of the deluxe mineral spa rooms – starting with the unique naming on the guest room door.
The Paso Robles Inn dedicated 18 deluxe mineral spa rooms to the winery-branded project, coinciding with the hotel’s major renovation. While the guest rooms have been completely renovated from floor to ceiling, including updated bathrooms, furnishings, amenities and their famous private mineral water soaking tubs, winery partners have provided representative touches in art, furniture and accessories to theme the room.
Guests receive complimentary tasting vouchers at their room winery as well as a glass of the featured wine in the hotel’s Steakhouse Restaurant.
The suites feature a variety of unique decorative items, from a real grape vine in the Ancient Peaks Winery room, to wine barrel chairs in the DAOU room, to beautiful murals over the spa tubs and glass lamps filled with corks. Other touches include wine barrel art, sculptures, coat racks and photography from the vineyards.
“There certainly is no lack of creativity demonstrated by our wine partners,” said Noreen Martin-Hulburd, CEO of Martin Resorts which owns and operates the Inn.
“This is a really exciting and interactive way for us to help tell the story of Paso Robles, and to celebrate our region’s reputation for wine, travel and hospitality,” said Nina Leschinsky, Direct to Consumer Sales Manager for Ancient Peaks Winery. “Each of the winery themed deluxe rooms have been transformed into a unique experience for guests. We put a lot of thought into decorating our Ancient Peaks Winery room, so that the room is tasteful, educational and entertaining. We are honored that the Paso Robles Inn selected us to participate in this remarkable concept.”
From small, family-owned wineries, to nationally known brands, the wineries chosen by Paso Robles Inn are unique and worth a visit. The concept is an opportunity to strengthen the partnerships already in place with the Inn, and to broaden exposure to each winery partner in a new way. In addition to the enhanced wine décor, each guest receives a complimentary glass of their namesake suites’ wine in the Inn’s Steakhouse Restaurant, as well as a complimentary wine tasting at the vineyard.
Robert Hall, owner of Robert Hall Winery, says “The Martin Family has always been such a strong supporter of local wineries. We are proud to be part of the Paso Robles Inn’s wine branded deluxe suites and decorating the room for guests with Robert Hall Winery images and furniture made from barrel staves was a very fun project.”
Who’s who in wineries represented in Paso Robles Inn’s deluxe mineral spa rooms
California wine lovers will surely recognize the labels; Ancient Peaks Winery, Broken Earth Winery, Castoro Cellars, DAOU Vineyards, Donati Family Estate Winery, Eberle Winery, Hope Family Wines, J. Lohr Winery & Vineyards, Le Vigne Winery, Peachy Canyon, Rio Seco Winery, Robert Hall Winery, Sextant Wines, Tables Creek Vineyards, Tobin James Cellars and Vina Robles are among the winery partners. (Paso Robles Inn’s dog-friendly rooms were chosen by Eberle Winery and Rio Seco Winery.)
Because Paso Robles has a growing craft beer movement, the Inn also selected a brewing partner for the concept; Firestone Walker Brewing Company.
Superior wine grapes a tradition in Paso Robles
The Paso Robles wine region is the largest and most diverse in California, with distinct soils, many microclimates and unique topography contributing to the depth of wines in the region. It is the fastest growing American Viticultural Area (AVA) in California; 32,000 vineyard acres. In the past decade, the number of wineries has swelled from 50 to more than 270 bonded wineries, ranging from nationally distributed, to mid-size and boutique.
The area’s Zinfandel grape historically gave the Paso Robles AVA its start as a wine grape producing region and is celebrated annually with its own festival in March. Today the region is well touted as California’s “Rhone Zone” for its production of world class Syrah as well as Viognier and Roussane, while Cabernet Sauvignon and other Bordelaise varietals remain king, comprising 50% of the region’s total acreage.
Commercial winemaking can be traced to the 1870s when Indiana farmer transplant Andrew York planted vineyards on his homestead. In the 1920s and 30s several families immigrated to the area to establish family vineyards and wineries. The Paso Robles region and the establishment known today as the Paso Robles Inn, gained more notoriety when Ignace Paderewski, the famous Polish statesman and concert pianist, visited Paso Robles Hot Springs. He sought the healing mineral waters which brought relief to his ailing hands, fell in love with the area, purchased 2,000 acres, and planted Petite Syrah and Zinfandel on his Rancho San Ignacio vineyard.
The idea forms over years
The Paso Robles Inn wine room concept is the brainchild of Noreen Martin-Hulburd, owner of Martin Resorts. The Paso Robles Inn is one of five boutique hotels owned and operated by the San Luis Obispo-based company. As the volunteer president of Visit San Luis Obispo County, President Martin-Hulburd is constantly considering ways to bring more visitors to not only her properties, but to local restaurants, shops, farms and farmers markets, outdoor adventure companies, and wineries.
“We are located in one of the most historic spots in California, on top of a never-ending supply of natural hot spring water that has been used for healing and relaxation for centuries,” said Martin-Hulburd. “We are also steps from several wine tasting rooms – but that’s not enough. We needed to bring pieces and expressions of these incredibly diverse wineries into our renovated guest rooms so our guests realize they are in the largest wine region in the state and it is waiting to be explored outside their door.”
The company recently researched and developed a guide featuring places for travelers to experience when they exit Highway 101 in the county. The “101 Reasons to Exit Highway 101” is designed to promote little-known places and local favorites including wineries. It’s available free at www.martinresorts.com.
The Paso Robles Inn renovation and winery room installation was completed in summer 2013. For reservations and information, visit www.pasoroblesinn.com, call toll free 800-676-1713 or direct at 805-238-2660.

Glen Stoller founded the family owned and operated Sunridge Nurseries in 1977, and Craig is a third generation vine grower following in his father’s footsteps. Sextant wines is devoted to creating unmatchable, old world varietal wines by taking full advantage of the ideal wine grape terroir of the Central Coast region, allowing grapes to grow to their optimal maturity, creating unique wines of supreme quality, including Chardonnay, Zinfindel, Cabernet Sauvignon, specialty wines and their property blend, Night Watch. www.sextantwines.com
Tablas Creek Vineyard
Tablas Creek Vineyard is the result of a decades-long friendship between the Perrin family of Château de Beaucastel and Robert Haas, longtime importer and founder of Vineyard Brands. The families created a partnership in 1985 and in 1989 purchased a 120-acre property in the hilly Las Tablas district of west Paso Robles for its similarities to Châteauneuf du Pape: limestone soils, a favorable climate, and rugged terrain. The partners imported the traditional varietals grown on the Perrins’ celebrated estate, including Mourvèdre, Grenache Noir, Syrah, and Counoise for reds, and Roussanne, Viognier, Marsanne and Grenache Blanc for whites. www.tablascreek.com.
Tobin James Cellars
Tobin James Cellars, located 8 miles east of Paso Robles on Highway 46, sits among 71 acres of vineyards and oak dotted hills. Built from the ground up on the site of an old stagecoach stop, it might seem more natural to stroll into the old-fashioned western-style saloon, place your booted foot on the brass rail of the bar and order a shot of whiskey from the bartender. However, in the Tobin James tasting room, award winning wines are poured from behind the grand, antique 1860's Brunswick mahogany bar from Blue Eye, Missouri. www.tobinjames.com
Vina Robles is the result of a unique personal trajectory, one that led winery founder Hans Nef from a rural village outside Zurich to the rugged terrain of California’s Central Coast, from the science of engineering to the art of winemaking. Vina Robles crafts wines that represent a stylistic bridge between the Old and New worlds, capturing the finesse associated with European wines while celebrating the bold natural flavors of our estate vineyards in Paso Robles. www.vinarobles.com
